I’m always looking for simple and healthy meals to make in less than thirty minutes. I’m a busy girl. I don’t have hours to spend in the kitchen.
This Mexican inspired pita pocket sandwich is loaded with protein, healthy fat, and lots of flavor. Pair it with a cup of soup or salad, and you have a balanced meal!
Recipe
1 can of black beans
1 can of corn
1 ripe avocado chopped up into chunks
1/2 cup of shredded veggie white cheddar (mozzarella is fine too)
1 large tomato diced
1 small diced purple onion
Cilantro
Salt and pepper
2 Pita Pockets cut length-wise
Directions:
1. Rinse black beans and place in pot over a medium-to-high heat for 10 minutes.
2. After beans are warm take them off burner and place into a bowl to cool for 5 minutes.
3. Add corn, avocado, tomato, onion, a few pieces of cilantro, and mix together. Add salt and pepper to taste.
4. Fill pita pocket halves with mixture and top with a sprinkle of cheese.
How simple was that, folks?




Why mexican inspired food always uses yellow corn? canned corn is ewww! At least it looks like you used soft pita .I recommend to use a little onion instead of the corn , and where´s the sauce? your taco needs a sauce…
Here’s how I make easy sauces containing very few calories.
a ripe tomato,
a onion around a quarter of size of the tomato
pinch of salt ,
an optional dash of ground pepper,
some cilantro around the size of the onion
some chilli any kind, around half the size of the onion
and some water so it can all blend,
put it in the blender for two minutes try for a “sweet relish” consistency
and is ready, optionally you can cook it till it boils, raw is “fresher” and you can still boil it later. Its easy I think and you get a sauce like if you were in a Mexican taquería , maybe you already know this recipe , but I wanted to share it with you because you seem interested in Mexican food.

The Mexicali Stuffed Pita-Pocket is not a taco recipe, but a sandwich recipe; a healthy alternative. In my experience, the juice from the tomatoes, corn, beans and onions are sufficient enough to replace the sauce-of course, people can always add sauce if they want.As for canned corn, people can always use fresh or raw corn. I generally give people the easiest/laziest versions of recipes, because I don’t want my readers to think they need to spend excessive time in the kitchen to eat well.
